Ingredients

  • 2 Teaspoon Olive Oil
  • ½ Cup Yellow Onion
  • 1 ¼ Teaspoon Chili Powder
  • 1 Teaspoon Ground Cumin
  • ¼ Teaspoon Garlic Powder
  • 2 Cup Cooked Shredded Chicken
  • 15 oz Black Beans
  • 4 oz Fire Roasted Green Chiles
  • 2 Tablespoon Cilantro
  • 15 oz Green Enchilada Sauce
  • 1 Cup Monterey Jack Cheese

Instructions

  1. Heat the 2 Teaspoon Olive Oil in a large skillet over medium high heat. Add the ½ Cup Yellow Onion and 1 ¼ Teaspoon Chili Powder, 1 Teaspoon Ground Cumin, and ¼ Teaspoon Garlic Powder to the skillet and sauté for a couple minutes until the onion softens.
  2. Lower the heat to medium and add in the 2 Cup Cooked Shredded Chicken, 15 oz Black Beans, 4 oz Fire Roasted Green Chiles, 2 Tablespoon Cilantro, 15 oz Green Enchilada Sauce and season with salt and pepper. Stir everything together.
  3. Top with the 1 Cup Monterey Jack Cheese and top with extra cilantro, avocado slices and sour cream or plain Greek yogurt if desired.
