Serves 4 per batch Ingredients
- 2 Teaspoon Olive Oil
- ½ Cup Yellow Onion
- 1 ¼ Teaspoon Chili Powder
- 1 Teaspoon Ground Cumin
- ¼ Teaspoon Garlic Powder
- 2 Cup Cooked Shredded Chicken
- 15 oz Black Beans
- 4 oz Fire Roasted Green Chiles
- 2 Tablespoon Cilantro
- 15 oz Green Enchilada Sauce
- 1 Cup Monterey Jack Cheese
Instructions
- Heat the 2 Teaspoon Olive Oil in a large skillet over medium high heat. Add the ½ Cup Yellow Onion and 1 ¼ Teaspoon Chili Powder, 1 Teaspoon Ground Cumin, and ¼ Teaspoon Garlic Powder to the skillet and sauté for a couple minutes until the onion softens.
- Lower the heat to medium and add in the 2 Cup Cooked Shredded Chicken, 15 oz Black Beans, 4 oz Fire Roasted Green Chiles, 2 Tablespoon Cilantro, 15 oz Green Enchilada Sauce and season with salt and pepper. Stir everything together.
- Top with the 1 Cup Monterey Jack Cheese and top with extra cilantro, avocado slices and sour cream or plain Greek yogurt if desired.
