Jennifer House Molasses Cookies
You can eat these in a boat, you can eat these with a goat, you can eat these here or there, you can eat these anywhere; but they are especially good with a hot cup of coffee and a good friend. (Or alone with a glass of water. Or in the desert as your last meal. Or as your only source of nutrition. ☺) Enjoy!
Note: This recipe, because of the volume, lends itself well to being made in a Kitchen Aid or Bosch. It can be mixed by hand, I did it that way for years, it will give you a work out. Also, this is an excellent recipe, but if you want excellent results you must follow the directions exactly. It is not a recipe you can fudge on. Don't use generic ingredients and don't skip the parchment paper! If you do, they will still taste good, but won't look as good.

Ingredients
- 1 lbButter
- ½ TablespoonSalt
- 3 CupsBrown Sugar
- 3Eggs, large
- ¾ CupMolasses, 180 ml
- ¼ CupWater
- 6 ½ CupsFlour, unsifted
- 1 TablespoonBaking Soda
- 1 TablespoonCinnamon
- 2 TeaspoonGround Cloves
- 2 ¼ TeaspoonGround Ginger
- ½ CupGranulated Sugar, for rolling
Instructions
- In a large mixing bowl or in the bowl of your Kitchen Aid or Bosch, cream 1 lb Butter, ¾ Cup Molasses, ¼ Cup Water, ½ Tablespoon Salt, and 3 Cups Brown Sugar together. Beat in 3 Eggs.
- In a separate bowl sift the dry ingredients together (6 ½ Cups Flour, 1 Tablespoon Baking Soda, 1 Tablespoon Cinnamon, 2 Teaspoon Ground Cloves, and 2 ¼ Teaspoon Ground Ginger), add to the cream mixture, and mix well.
- Refrigerate 24 hours (or at least 8 hrs.)
- Roll into 2 inch balls, then roll in ½ Cup Granulated Sugar. Place on a cookie sheet lined with parchment paper.
- Bake at 350° for 15-18 minutes. Yields 3 ½ dozen.
