Spinach Burgers
The very precious couple that led us to the Lord gave me this recipe the year Bruce and I got married (1987). I still make this recipe at least once a month. The measurements are approximate, so you may have to play with it a little to get the consistency you like, but you can't make it wrong so give it a try. My kids (and Reid) beg for this meal.

- 2 BagsFrozen Chopped Spinach, thawed and water squeezed out
- 3Eggs
- ½ CupYellow Onion, chopped (or more)
- ½ CupRed Bell Pepper, chopped, optional
- ¼ TeaspoonGarlic Powder, up to ½ t, depending on your taste
- ½ CupBread Crumbs, or more as needed
- ½ CupParmesan Cheese, grated (green canister kind), or more as needed
- 2 TablespoonOlive Oil, for sautéing and frying
Instructions
- Sauté the ½ Cup Yellow Onion in 1 Tablespoon Olive Oil until lightly brown. If using the ½ Cup Red Bell Pepper, sauté it with the onion.
- Squeeze all the water out of the thawed 2 Bags Frozen Chopped Spinach and place it in a large bowl.
- Push the spinach over to one side of the bowl, break the 3 Eggs on the other side of the bowl and beat them with a fork, then incorporate them together.
- Add in all the rest of the ingredients (the sautéed onion, ¼ Teaspoon Garlic Powder, ½ Cup Bread Crumbs, and ½ Cup Parmesan Cheese) and mix thoroughly. It should be of the consistency to be made into patties and hold together.
- Form into patties (about 10) and fry in the remaining 1 Tablespoon Olive Oil over medium heat, about 7 min on each side. I usually cover them for most of the cooking time.
- I serve this with steamed baby carrots and egg noodles. Bruce likes his spinach burger with a little mayo on top.
